Ground Beef and Chick Peas Recipes

This spiced ground beef and chickpea stew is the best weekday meal for the whole family. It is easy to make as I'm using my pressure cooker/instant pot and it is ready with just 15 minutes. However, if you don't have an instant pot you can still make this ground beef and chickpea stew either on a pressure cooker or in a regular pot. I include instructions later on this post so keep reading. This dish is packed with protein and vegetables so it is a perfect meal to offer to your little ones as well.

What you will need

  • Ground beef. I'm looking for the best quality when it comes to food and especially to meat. So, I pick 100% grass-fed organic ground beef. I always check the label to say "100% grass-fed" as this means grass-fed and grass-finished.
  • Chickpeas. I use dried chickpeas which I soak overnight in water with a few drops of lemon juice. You can always skip this step and use canned chickpeas. Just make sure that you will add them later in your cooking process, towards the end of your cooking as they will become mushy.
  • Vegetables: onions, carrots, zucchini, garlic. I love to add a lot of different vegetables on my recipes as they provide extra nutrients and flavor.
  • Spices: cinnamon stick, ground clove, ground nutmeg, cumin, turmeric, oregano
  • Pantry staples: extra virgin olive oil, tomato puree or crushed tomatoes or passata

Let's talk about spices

You may question why we need so many spices in this dish. The truth is that each one of those adds extra flavor and the final result is absolutely amazing. You may also wonder if I would offer this to my one year old baby and the answer is "absolutely yes". Elpida truly loves this dish. In fast this is her favorite meal. She is following baby led weaning and she eats by herself since the beginning of solids. However even if you offer puree food to your babies, why you would offer a plain boring food if you can spice things up? Spices are suitable since the beginning of solids and there is no official guideline to avoid them, always in moderation. In fact, spices are packed with antioxidants and they have great benefits for our overall health.

How I served it

Panos is obsessed with his eco-friendly bamboo plates from Bubba Boo. He likes to pick in which plate I will serve him and his little sister. Today he picked the Pipa Penguin plate for himself and the shark plate for his sister. In both kids I served a good amount of the ground beef and chickpea stew, along with grape tomatoes, cucumber cut into flowers using my flower veggie cutter* and strawberries. For Panos I also added some feta cheese cutouts. For Elpida I still try to keep the salt intake to minimal so I didn't add any feta. And of course I offered our beloved doddl spoons*.

Can I make this recipe without pressure cooker?

If you dont have a pressure cooker or an instant pot you can always make this dish on a slow cooker or in the pot. You will need to adjust slightly the process and the cooking time but the result is the same.

How to make this in the slow cooker
  1. In a standing blender, blend the onion, garlic, carrot and zucchini
  2. Add all the ingredients expect the ground beef and olive oil in the slow cooker
  3. In a big pan saute the ground beef with the olive oil over medium heat until is golden brown making sure that you break it down with a wooden spoon
  4. Add the sauteed ground beef in the slow cooker
  5. Set the slow cooker for 9 hours on low or 4.5 hours on high
How to make this in a pot

If you want to use a regular pot, you should follow the same instructions but you will need to cook this for a longer period of time until the chickpeas are tender and ground beef is fully cooked. This will take approximately 45 min. If you are cooking in the pot you will need to make sure that you check if it needs extra liquid and stir occasionally. You might need to add extra water depending on how fast the chickpeas soften.

Ground beef and chickpea stew

Course: Dairy free, Gluten free, Legumes, Meat, Soups

Ingredients

  • 2 pounds (0.91 kilograms) ground beef

  • 2 cups dry chickpeas, soaked overnight

  • 1 medium onion

  • 2 medium carrots

  • 2 medium zucchini

  • 2 cloves of garlic

  • 16 oz (453.59 grams) passata or crushed tomatoes

  • 3 tbsp extra virgin olive oil

  • 1 tbsp dry oregano

  • 1 cinnamon stick

  • ½ tsp ground nutmeg

  • ½ tsp ground cloves

  • ½ tsp turmeric

  • ¼ tsp cumin

  • salt and pepper to taste

Directions

  • In your pressure cooker, over medium heat add the olive oil and saute the ground beef until golden brown making sure that you break down with a wooden spoon
  • Add the spices and cook until fragrant for about 5 min
  • In a stand blender, blend all the vegetables
  • Add the vegetables in the pressure cooker and stir to incorporate
  • Add the chickpeas, passata, oregano, salt and pepper and stir well
  • Add as much water needed until you barely cover the chickpeas (around 1 cup)
  • After 15 minutes, release the pressure, open the lid and stir
  • Close the lid of the pressure cooker and cook for 15 min after it reaches the highest temperature
  • If it is still has a lot of liquid let it boil without the lid for 5 more minutes
